The aim was to combine incomparable apple taste with one of our client’s know-how – a Parisian Maître Pâtissier. The original idea of harvesting fruits, processing them into tatin batter, then deep-freezing the tarts on site quickly became the logical answer to preserve fruit freshness and reduce our ecological footprint to the minimum by limiting transport.
Today, Pomone tarte tatin is a staple « Made in France » dessert. Available “a la carte” in most brasseries, the tarte tatin made its way to the finest dining restaurants and will enhance cocktails parties as single portion delight.
